1 lb ground beef
3 extra large eggs, beaten
1 1/2 C. minced onion
1/2 lb shredded cheddar cheese
black pepper to taste
Preheat oven to 350 degrees. Combine all ingredients and mix well. Add pepper to taste. Roll mixture into 1-1/2" balls and place on cookie sheet. Bake 20-25 minutes. Makes about 50 meatballs. They freeze well after cooking for an anytime snack or breakfast treat. Serving size 3 meatballs.
