This is a good salad for a low fat lunch with some protein.
Dressing:
1 C. olive oil
2 1/3 C. red wine vinegar
1 clove garlic, slightly broken
1/2 tsp. basil
1/4 tsp. oregano
Salt & pepper to taste
Salad:
2 C. cannellini beans
2 red onions, chopped
1 bell pepper
3 Tbsp. minced parsley
Dressing: Mix all ingredients together and let set at room temperature to
blend flavors.
Salad: Drain 2 cans of cannellini beans and rinse under cold water. Place
in a bowl and add 2 red onion chopped, 1 bell pepper cut in small pieces and
some minced parsley. Add the dressing and adjust the salt and pepper. Add
a little more oregano, if desired. 4-6 servings.
