2 green onions
5 cups bean sprouts (10 ounces)
10 cooked fresh crab legs (each about 2
inches long) -- shelled
OR
10 imitation whole crab legs (each about 2
inches long)
1 teaspoon sesame oil
10 leaf lettuce leaves
10 ready-to-eat spring roll skins (8 1/2
inches square)
1/3 cup chopped fresh cilantro
Honey Sichuan Sauce -- (recipe follows)
HONEY SICHUAN SAUCE
1/3 cup honey
1/3 cup chili pure
3/4 cup chopped chicken
1/2 cup chopped almonds
1/4 cup grated Switzerland Swiss cheese
1 tsp chopped gherkin
Salt and pepper to taste
Mayonnaise to moisten
Buttered toast rounds
Sliced blanched almonds optional
Mix the chicken with almonds and grated cheese. Add the gherkin and salt and pepper to taste. If the paste is not bound together, add a little mayonnaise to hold it. Pile on buttered toast rounds and grill under a low flame. You may top this with a slice of blanched almond if you wish.

Preheat oven to 375 degrees. Mix all ingredients together thoroughly. Form into 1-inch balls.
Place on ungreased cookie sheets. Bake for 15 minutes or until golden brown. Sausage cheese balls can be frozen uncooked. Thaw and cook according to directions.

Separate onion into rings and blanch 15 seconds. Chill in ice water and drain. Roll in flour, dip in milk, then roll in mixture (half and half) of pancake flour mix and cornmeal. Freeze on cookie sheet. Freeze with waxed paper between layers. To serve, fry at 375 degrees while frozen. Salt and serve. They are handy to have in freezer.
